Chicken & Zucchini Poppers
Yield: 4-5 servings
Ingredients:
- 1 lb. ground chicken breast
- 2c grated zucchini
- 2-3 green onions, sliced
- 3-4 Tbsp cilantro, minced
- 1 clove garlic
- 1 tsp salt
- ½ tsp pepper
- ¾ tsp cumin
- olive oil, coconut oil, avocado oil, or ghee for cooking
Directions:
- Mix all ingredients except oil.
- Heat oil in frying pan.
- Scoop meat into balls and cook about 5-6 minutes on each side.
- Bake: Place meat balls on greased baking sheet. Drizzle additional oil over the meatballs. Bake at 400° F 20-25 minutes. Broil 2-3 minutes.
- Serve with guacamole and salsa.
